Step 2: Parboil the Potatoes
Add the diced potatoes to a large saucepan, cover with water, and toss in a generous pinch of salt. Bring to a boil, then reduce heat slightly and cook for 5 minutes. Drain immediately this step ensures your potatoes get tender but not mushy in the casserole.

Step 3: Build the First Layer
In a lightly greased 9-inch square baking pan or casserole dish, spread half the potatoes across the bottom. Add all of the chopped chicken right on top. Season the chicken with ¼ teaspoon each salt and pepper. Then sprinkle half the bacon, ½ cup cheese, and half the green onions.

Step 4: Repeat and Top
Add the remaining potatoes over everything. Follow with the remaining bacon, another ½ cup cheese, remaining green onions, and the rest of the salt and pepper. Pour the heavy cream evenly across the top, and dot with the butter pieces.

Step 5: Bake Until Golden and Bubbly
Cover with foil and bake in a preheated 350°F oven for 1 hour. Uncover and bake another 30 minutes. Just before the end, sprinkle the last ½ cup of cheddar on top so it melts beautifully.

That’s it! Your Loaded Baked Potato & Chicken Casserole should now be bubbling and golden the top just slightly crispy and the inside packed with layers of hearty, comforting flavor.

For fans of layered comfort dishes, it gives a similar cozy vibe to our Garlic Parmesan Cheeseburger Bombs and is just as easy to serve up with a big spoon and bigger appetite.

Bonus Tips to Nail It Every Time

Pro Tips & Storage

Expert Tips for a Perfect Loaded Baked Potato & Chicken Casserole Every Time

Making a great casserole isn’t just about ingredients it’s about technique. Here’s how to make sure your Loaded Baked Potato & Chicken Casserole turns out creamy, savory, and satisfying with every single bake:

A hearty serving of our Loaded Baked Potato & Chicken Casserole
  • Use starchy russet potatoes for a fluffy, tender bite. Waxy potatoes stay too firm and won’t absorb the cream as well.
  • Dice chicken evenly so it cooks at the same rate as the potatoes.
  • Shred your own cheese. Pre-shredded cheese contains anti-caking agents that can keep it from melting smoothly. For the richest finish, shred fresh.
  • Dot with real butter. Those little pockets melt down into the casserole and create pockets of buttery flavor.
  • Cover first, uncover later. This two-step bake gives the casserole time to steam and soften before it crisps up on top.

If you loved the layered effect in our Crabby Shrimp Stuffed Garlic Bread Bombs, you’ll find similar magic here savory balance in every bite.

In the fridge:
Let the casserole cool completely, then store covered in the fridge for up to 4 days. You can keep it in the original baking dish or portion it out into meal-prep containers.

In the freezer:
Yes, this casserole freezes well! After baking and cooling, cover tightly in foil or move to a freezer-safe container. Freeze for up to 2 months. Thaw overnight in the fridge before reheating.
