What is Mediterranean Ground Beef Stir Fry

Mediterranean ground beef stir fry is a fast-cooking, one-pan dish that blends ground beef with Mediterranean-inspired vegetables and seasonings. Think of it as a lighter, veggie-forward stir fry that skips the heavy sauces for bright, natural flavor. It includes ingredients like cherry tomatoes, red bell pepper, spinach, garlic, and green onions all simmered until juicy and fragrant.

What makes it Mediterranean? The olive oil base, fresh herbs like oregano, and optional toppings like feta cheese give it that signature sun-kissed taste. It’s hearty without being greasy, fresh but still cozy. Plus, this dish fits right into the kind of meals we love: balanced, flavorful, and done in under 30 minutes.

Unlike traditional Asian-style stir fries, this version is sauce-free and leans into the natural juices from the tomatoes and vegetables. That’s what gives it a clean, garden-fresh taste especially when you serve it with a scoop of hummus or a drizzle of tahini.

This Mediterranean ground beef stir fry is also great for mixing things up. Don’t have spinach? Swap it with kale. Want more heat? Add chili flakes or a spoon of harissa. Just like our Swedish meatballs recipe, it’s one of those meals that adapts to whatever you’ve got on hand while still delivering bold, satisfying flavor.

Ingredients

Ingredients for Mediterranean ground beef stir fry in ceramic bowls
All the fresh ingredients you need for this quick Mediterranean beef stir fry
  • 1 tablespoon olive oil
  • 1 red bell pepper, deseeded and diced
  • 1 pint cherry tomatoes, sliced in half
  • 8 ounces baby spinach
  • 4 garlic cloves, minced
  • 2 green onions, thinly sliced (white and green parts separated)
  • 1 pound ground beef
  • ½ teaspoon dried oregano
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tablespoons crumbled feta (optional)

Optional Add-Ins:

  • Red pepper flakes (for heat)
  • Sun-dried tomatoes or kalamata olives (for added flavor)
  • Zucchini or kale instead of spinach

Step-by-Step

  1. Sauté the vegetables: Heat olive oil in a large skillet over medium-high heat. Add diced red bell pepper and halved cherry tomatoes. Sauté for 4–5 minutes until tomatoes begin to blister and soften. Add minced garlic and stir for another minute.
  2. Wilt the greens: Add the baby spinach and the white parts of the green onion. Don’t worry if the pan looks full the spinach will wilt down quickly in about 2–3 minutes. Once done, transfer the sautéed vegetables to a plate.
  3. Cook the beef: In the same pan, add the ground beef along with the oregano, salt, and black pepper. Break it up using a spatula and cook until browned and fully cooked through. Drain off any excess grease if necessary.
  4. Combine and finish: Return the sautéed veggies to the skillet with the cooked beef. Stir everything together and cook until warmed through. Add in the green tops of the green onions and stir.
  5. Garnish and serve: Sprinkle crumbled feta over the top (if using) and serve immediately.

We love pairing it with couscous, but you can also enjoy it over rice, in wraps, or as a low-carb bowl like we do with our cheesy beef fajita dirty rice casserole.

What to Serve Mediterranean Ground Beef Stir Fry With

This Mediterranean ground beef stir fry is incredibly flexible when it comes to sides. You can keep it low-carb, go all-in with grains, or even scoop it into something handheld it plays nice with just about everything.

Rice & Grains: Serve it over a bed of fluffy jasmine, brown rice, or nutty quinoa. Couscous also adds a traditional Mediterranean texture that soaks up all those tomato juices beautifully.

Flatbreads & Wraps: Spoon it into warm pita or wrap it in naan for a street food-style dinner. Add a drizzle of hummus or tzatziki for extra Mediterranean flair.

Low-Carb Options: For a lighter meal, pile it on top of cauliflower rice or into lettuce wraps. The ground beef and veggies pack enough flavor that you won’t miss the carbs.

try chopped kalamata olives, a dollop of Greek yogurt, or fresh parsley.

For a fresh contrast, pair it with a citrusy salad or roasted veggies, like the ones we serve alongside our chicken kabob recipe.

Feeling cozy? Plate it next to a scoop of rice and a slice of our Swedish meatballs for a mix-and-match Mediterranean–Nordic dinner!

Top Tips for Perfecting

If you want to make this Mediterranean ground beef stir fry taste like it came straight from a cozy taverna, these are the tips we always follow:

Use a wide pan
A large sauté pan (like our go-to All-Clad) gives your ingredients room to breathe. Overcrowding causes steaming instead of browning, especially when blistering tomatoes.

Salt in layers
Season the veggies while cooking, and again when browning the beef. This helps build deeper flavor at every step.

Don’t skimp on garlic and oregano
They’re the heart of Mediterranean flavor. Fresh garlic makes a difference, and if you can, use high-quality dried oregano for a stronger herbal punch.

Swap and build
This recipe is forgiving. You can use ground lamb instead of beef or swap spinach for kale or Swiss chard. We even love folding in chopped sun-dried tomatoes or kalamata olives for an extra burst, like we do with our chicken fried chicken sides.

Add heat or tang
Crushed red pepper flakes or a spoonful of harissa bring a kick. Want acidity? A squeeze of lemon at the end brightens everything up.

Make it a bowl
Layer this over grains or pile it into a big dinner bowl with hummus, pickled onions, and crunchy cucumbers much like how we style our shrimp taco bowls.

With a few tiny tweaks, this stir fry can become your personal signature dish.

Storing and Reheating Tips

One of our favorite things about this Mediterranean ground beef stir fry is how well it holds up for leftovers. Meal prepping or saving dinner extras — just as tasty the next day.

Storing in the Fridge
Let the stir fry cool completely before transferring it to an airtight container. It will keep well in the refrigerator for 3 to 4 days. This makes it perfect for meal prep or quick lunches. Pair it with some reheated grains or serve it cold in a wrap for a fresh twist.

Reheating Instructions
You can warm it on the stove over medium heat, adding a splash of broth or water to keep it from drying out. cover it and heat for 1–2 minutes until warmed through.

Freezing Tips
To freeze, skip the feta topping. Place the cooled beef and veggie mixture in a freezer-safe container or zip bag. Freeze for up to 3 months. When you’re ready to use it, thaw overnight in the fridge and reheat on the stovetop. Add feta fresh when serving.

We use a similar freezer trick with our beef stew slow cooker meals, and it’s a lifesaver for busy weeks.

Planning ahead? Make a double batch enjoy one now and freeze one for later.
